Red Quinoa Salad

This recipe uses red quinoa for the striking color, but any variety would work well. Just consult the package directions for appropriate cooking times.
Ingredients
  • 1 cup red quinoa
  • 2 cups water
  • salt and pepper
  • ¼ cup red wine vinegar
  • 1 tsp dried oregano
  • ¾ cup olive oil
  • 1 cup roma tomatoes, diced (about 2 tomatoes)
  • 1 cup cucumber, diced (about ½ cucumber)
  • 1 cup red onion, diced (about ½ red onion)
Instructions
  1. In a medium pot, add quinoa, water, and a pinch of salt. Bring to a boil over high heat. Cover, reduce heat to low, and simmer for 20 minutes.
  2. After 20 minutes, remove from heat and keep covered for an additional 10 minutes before fluffing with a fork.
  3. Meanwhile, add vinegar, oregano, salt, and pepper to a medium mixing bowl. Whisking quickly, slowly add the olive oil until fully incorporated.
  4. Pour about half of the vinaigrette in the quinoa. Add the vegetables, folding carefully to combine. Add more vinaigrette to taste.
