Simply Sauteed Shrimp Scampi

Ingredients
  • 2 Tbsp olive oil
  • 2 Tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1 lb. shrimp
  • ½ cup white wine
  • salt and pepper to taste
  • 2 Tbsp freshly squeezed lemon juice
  • 2 Tbsp fresh parsley, chopped, (plus more for garnish)
  • lemon zest (for garnish)
Instructions
  1. Heat a saute pan over medium-high heat. Add oil and butter, heating until butter has melted. Add garlic and saute for 1 minute or until the edges of the garlic just start to brown.
  2. Add shrimp and cook for about 30 seconds before adding wine. Stir to combine, turn heat to high, and cook for an additional 2 minutes before flipping shrimp to other side.
  3. Season with salt and pepper and cook for one minute or until shrimp are cooked through. Top with lemon juice and parsley.
  4. Serve over pasta and garnish with lemon zest and additional parsley.
