Easy Rice Pilaf

Ingredients
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 1 clove garlic, minced
  • salt and pepper
  • 2 cups long grain white rice
  • 4 cups chicken broth
Instructions
  1. Heat oil in a 3.5 qt pot over medium-high heat. Add onion, garlic, and a pinch each of salt and pepper. Cook until onion just begins to brown.
  2. Add rice and cook until nearly translucent, 3-5 minutes.
  3. Add broth. Bring to a boil, cover, reduce heat to low, and simmer for 20 minutes.
  4. Remove from heat and let rest, covered for 10 minutes.
  5. Season with additional salt and pepper and serve warm.
  6. Enjoy!
