Our household is non-stop busy all the time! With two working parents, three school-aged kids with after-school activities, and volunteer efforts, we keep hopping! Still, eating together as a family has always been a big priority for us. The trick has been to find shortcuts, like breaking out the saute pan to make a batch of Sauteed Peppers and Onions on the weekend, to make weeknight meals fast, easy, and enjoyable for all of us.
A simple saute of peppers and onions can be a base for many a meal. They can make for a simple plate of nachos…
…or a yummy taco. You can even add some Perfectly Sauteed Chicken Breast if you need some meat in your meal!
Another option? Amp up a basic cheeseburger!
These are meals that, once you have your sauteed onions and peppers cooked down, take less than 10 minutes to prepare. What a great way to keep the family together around the dinner table throughout the week!
Sauteing your peppers and onions is easy as easy can be. Just start by slicing up some peppers and onions. I love grabbing peppers of different colors to brighten things up a little! Try to make sure that they are pretty uniform slices so that everything cooks at about the same speed.
Pour a little olive oil into a hot skillet and toss in your peppers and onions with a heavy pinch or two of salt.
Once they are all cooked down, wilted, caramelized, and just plain yummy, you can use right away or put them in a storage container for use throughout the week!

- 3 Tbsp olive oil
- 1 onion, sliced
- 4 bell peppers, sliced
- salt and pepper to taste
- Heat olive oil in a large skillet over medium-high heat.
- Add onion and peppers to the skillet. Season with salt and pepper. Stir to coat evenly.
- Reduce heat to medium and cook for about 10 minutes or until cooked to desired doneness, stirring every minute or two to prevent sticking.
- Remove from the pan and use immediately or store for use throughout the week. Enjoy!
